Before and After

Made a pork loin for the first time in a year the other night.  Not much fat on top which worried me but the finally product turned out great.  I've never seared a loin before.  Everyone says you must. I just rubbed it with olive oil and the rub and cook.  Adding some rosemary, thyme and oregano from the garden. WL says it was still juicy the next day.....
